Renowned chef, Stuart McClarty participated in our World Food Day activation at our Jhb branch. We sent him a ‘mystery box’ containing surplus food ingredients and challenged him to create something amazing using these ingredients that would highlight how ingredients considered “food waste” by many, could be turned into the most tasty and nutritious meals.

Chef Stuart McClarty is the owner of The Underground Bakery and former Stadium Head Chef at the FNB Stadium during the 2010 Soccer World Cup. He was one of a few ‘chefluencers’ who participated in our World Food Day activation at our Jhb branch. As a seasoned traveller to exotic locations, and someone who firmly believes in “cooking with integrity and love”, we felt it quite fitting to send him a ‘mystery box’ containing surplus food ingredients from our Jhb warehouse.

We challenged him to create something amazing using these ingredients, that would highlight and serve to educate how ingredients considered “food waste” by many, could be repurposed into the most tasty and nutritious meals.

Rising to the challenge, Chef Stuart had fun ‘repurposing the surplus’ and transforming the ingredients, including “tired looking” cabbage and “ugly” beetroot into very tasty dishes.
FoodForward SA’s Repurpose the Surplus campaign was launched to educate the public about surplus foods, change the perception of ‘food waste’ and raise awareness of South Africa’s food insecurity crisis and what we can do to address it. In South Africa, an estimated 10 million tons of food is lost or wasted every year, while approximately 30 million people have no regular access to enough safe and nutritious food.
Chef Stuart’s recipes for tasty Roasted Beetroot and delicious Bully Beef Hash are below:
Roasted Beetroot
Peel the beetroot
Cut the beetroot into wedges
Place in a roasting tray
Season with salt & pepper
Add sunflower or olive oil
Rub the oil and seasoning in
Place in the oven at 180 C and roast until cooked (this will depend on the size of the beetroot)
Eat and Enjoy!
Bully Beef Hash
Ingredients:
1 tin bully beef
1 white cabbage
Crushed garlic
Leeks
Seasoning
Method:
Shred the cabbage
Finely cut the leeks and wash
Cube the bully beef
Fry the leeks and garlic in some oil
Add the shredded cabbage and sweat it off
Once this is cooked add the bully beef
Correct the seasoning
Remove from the heat quickly as the bully beef can stick and burn
